Spanakopita Lasagna

Fussing dough can be just a fuss. Lasagna strips, however, are amazing to cook with and the perfect layers of bechamel, cheese, spinach, and herbs.
How to prepare it:
- Mix the spinach, herbs, green onions, feta cheese, and eggs (optional).
- Place a layer of the lasagne in the bottom of the baking dish.
- Add the mixture on the top and grate some mozzarella.
- Cover with another layer of lasagne.
- Bake in a preheated 180C oven, for about 30-45 minutes until the sides get golden brown in colour.
