Phirni or firni is a classic Indian sweet pudding that is a must in north India on festive occasions or special celebrations like Diwali as well as for Karwa Chauth festival.
This creamy dessert is very easy to make and liked by many. Apart from phirni, rice kheer and seviyan kheer are two similar sweet recipes which are equally popular in north India and made on festive occasions.
Phirni Recipe
Perfect Kolkata Mughlai Style Rice Pudding
Ingredients
- 2 ltr milk
- 1 cup basmati rice
- ½ tsp saffron
- ½ cup sugar
- 2 tbsp almonds (chopped)
Instructions
- Firstly, soak 1 cup of basmati rice for 30 minutes.
- Discard the water and blend rice to coarse paste. keep aside.
- In a large kadai boil 2 litre milk.
- Stir occasionally, and simmer for 20 minutes. Keep the flame on low or till milk thickens.
- Now add in prepared coarse rice paste.
- Boil the milk till the rice gets cooked completely.
- Further add ½ cup of sugar and 2 tsp saffron milk.
- Mix well till the milk thickens and turn creamy.
- Add chopped almonds and mix well.
- Finally, serve chilled phirni garnished with few chopped nuts.
